what if you want to cache descriptors? what if you want delayed logging? what if you want custom logging format?
on a production server you would want tons of tweaks like that and "better defaults" won't help you at all
if any, empty default config will make it even worse because you would have to search how to change every small little thing, but in nginx.conf provided by the distro you can start tweaking stuff right away
